Ingredients:

8 ounces of pasta (penne, fusilli, or any shape you prefer)

2 cups broccoli florets

2 cloves garlic, minced

2 tablespoons olive oil

1/4 cup pesto sauce

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Optional: red pepper flakes for a spicy kick

Instructions:

  1. In a large pot, bring water to a boil and add a generous pinch of salt. Once boiling, add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add broccoli florets to the skillet and continue to cook for another 3-4 minutes, stirring occasionally, until the broccoli is bright green and slightly tender.
  4. Once the pasta is cooked, reserve about 1/2 cup of the pasta cooking water, then drain the pasta and return it to the pot.
  5. Add the cooked broccoli and garlic to the pot with the pasta.
  6. Stir in the pesto sauce, grated Parmesan cheese, and a splash of the reserved pasta cooking water. Mix until everything is well combined, and the pasta is evenly coated in the sauce.
  7. Taste and season with salt and pepper as needed. For those who enjoy a bit of heat, sprinkle some red pepper flakes on top.
  8. Serve your One-Pot Broccoli Cheese Pesto Pasta hot, garnished with extra Parmesan cheese if desired.

Enjoy your delicious and hassle-free meal that brings together the goodness of broccoli, the richness of cheese, and the zingy flavors of pesto, all in one pot!
